Daily Report How to Make Sponge (English Version)

I will return to do activities like the one done by a cook in the kitchen, but what I will do is not like they do every day, even though I only learn from the portions.


This time I just focus on studying the pastry & bakery section to go back to learning the basic basics about how to make good cakes & bread from Mr. Ical and Chef Salam. And this time I will make Cremeux Cake Sponge. If you want to make a sponge with good results, the temperature for all ingredients used must be the same because if there is one ingredient whose temperature is hot or cold, the result will be less good.

Ingredient :
Egg yolk                                  12 pcs
Egg whole                               4 pcs
Sugar                                       80 gr
Flour                                        70 gr
Cornstarch                               30 gr
Milk Powder                           20 gr
Melted Margarine                   150 gr
Baking Powder                       ¼ tsp
Lemon Juice                            1 tbsp

Procedure :

Mix sugar and eggs then mix using a mixer until it is stiff. if the mixture is stiff, put dry ingredients in the form of flour and so on, then stir gently using a spatula and put lemon juice. After that, enter the melted margarine, stir again, then put it in the mold that has been provided, then put it in the oven to bake for 10-20 minutes at 160-180 C °. after baking for 10-20 minutes and if it is cooked, remove it from the oven and cool and remove from the mold.
